Mtr style Rawa Kesari
A dessert made with semolina and vermicelli

Equipment
- 1 Fine mesh strainer
Ingredients
- 100 gram fine semolina flour
- 50 gram vermicelli
- 3-4 tbsp ghee
- 10-12 gram cashew
- 5-8 gram cuddapa almonds
- 12 gram raisin seedless preffered
- 15 green cardamomn
- 3 bayleaf meduim
- 1/4 gram saffron
- 5 tbsp sugar
- 520 ml milk
Instructions
- In a sauce pan, pour the milk, add saffron, bayleaves, crushed green cardamomn , 200ml water and let it simmer for 30 minutes.
- Meanwhile, in a pan heat the ghee add the dry fruits and fry them on a low- medium heat until slightly golden.
- Take them out and add the vermicelli noodles and saute' until slightly golden on a low-medium heat.
- Now add the semolina flour and continue to saute untill the flour turns golden.
- Strain the simmeriing milk into the pan.
- Turn the heat to high and continue stirring until all the liquid is soaked into the semolina.
- When it stops sticking and reaches a mashed potato like consistency add the dry fruits and sugar.
- Mix on a low heat.
- When the sugar dissloves, its ready.
- Serve warm.
Notes
- The Mtr style rawa kesari is served in Mtr, a popular restaurant chain in Bengaluru, India.
- Unlike normal rava kesari, this version contains vermicelli noodles, which gives it a slightly chewy textures.
