Potli Masala

Potli masala literaly means bag of spices. It consists of more than 10 spices and herbs. These herbs are medicinal and aromatic. These are put in a bag or cloth, then put into slow simmering dishes or liquids. So, that the flavors are infused into them gradualy over a period of time. Potli masala is used to flavour dishes such as Nihari, Paya, Haleem etc. These are considered healthy broths.

Equipment

  • Muslin cloth or Nut milk sac

Ingredients

  • 1 tbsp clove
  • 1/2 tbsp cubeb pepper
  • 1/2 tbsp black peppercorn
  • 1/2 tbsp fennel seed
  • 2 bayleaf large
  • 1/2 gram nutmeg
  • 1 tbsp black cumin
  • 2 black cardomomn crushed
  • 12 green cardomomn crushed
  • 2 tsp dry rose petal
  • 2 blade mace
  • 5 gram camel grass
  • 1 tbsp dry hybiscus Petal
  • 2 Star anise
  • 3 stick cinamon 1 inch each
  • 8 gram spike ginger lily
  • 6 gram Alpinia galanga wild (paan jad, kulanjan)
  • 1/2 gram sandal wood powder

Instructions

  • Put all the ingridients in a muslin cloth or nutmilk sac.
  • Use this as teabag to infuse flavors into your dish
