American BBQ sauce

The word barbecue or BBQ in short comes from the spainish word Barbacoa, in which big pieces of meat and vegetables are cooked in a pit in the ground over hot coals. This tradition still remains in mexico with the same name. American Barrbecue tradition is vast. A barbecue expert with experience is called a pitmaster. Each region has it own techniques, ingredients and type of sauce. Some of these sauces are only for basting the meat while cooking. Some of them are used as a dipping sauce. Some can be used for both. Some regions dont even use a sauce.

Some of the most common ingridients is an American style Barbecue sauce are Ketchup, garlic powder, ginger powder, dry herbs like oregano, thyme etc. Along with other ingridients like vigenar, sugar and chilly powder and alchohol. Most of these sauces are kind of hot and sweet sauce that go realy well with meats.

Below given is a recipe for a basic barbecue sauce.

Ingredients

  • 40 grams onion chopped
  • 20 grams leek chopped
  • 20 grams celery chopped
  • 15 grams bellpepper chopped
  • 25 ml oil refined
  • 70 ml worcestershire sauce
  • 80 ml sugarcane molasis
  • 150 ml tomato ketchup
  • 50 ml white vinegar
  • 50 ml soy sauce
  • 100 ml apple juice
  • 120 ml dark rum
  • 40 ml whiskey
  • 1 tsp thyme dry
  • 1 tsp oregano dry
  • 1/2 tsp rosemary dry
  • 75 ml honey
  • 1 tsp all spice berries powder
  • 1 tsp kashmiri chilli powder
  • 1 tsp red chilli powder
  • 2 tsp djon mustard see blog post

  • salt to taste

Instructions

  • Saute the onion, leek, bellpepper and cellery in oil untill slightly brown.
  • Turn the heat to low.
  • Add all the other ingredients, except the rum.
  • Simmer for 20 minutes, add 110 ml of rum.
  • Simmer for 40 minutes.
  • Turn the gass off , add the remaining 10 ml dark rum.

Notes

  • This can be used for basting, dipping and marinade.
